Peruvian chef and entrepreneur, part of a generation determined to revolutionise local cuisine. He chooses to approach the great diversity of Peruvian ingredients via a "vertical" focus, i.e. working based on ecological levels. Interested in conveying the complexity of his land and the continent in general, he promotes the Orígenes project, along with Mauro Colagreco and Jorge Vallejo, with which he takes a deeper look at ancestral cuisine, its people and its territory. He owns these restaurants: Central (Lima), Senzo (Cruzco), Lima (London). His Central restaurant is recognised as one of the best in Latin America and the world.
