Jose Luis “Chele” González is a Spanish chef. He has worked in restaurants like Andra Mari, Arzak, El Bulli and Mugaritz. He recently moved to the Philippines, where he opened his restaurant VASK Gallery with the artist Juan Carlo Calma. In his gastronomic proposal he strives to find new ingredients, flavours and, most importantly, new ways of understanding food. On his travels he looks at the unusual, at ingredients which he can later use to captivate immersed in a discourse of contemporary cuisine.
