Chef, writer, businessman and major promoter of Peruvian culinary arts. In 2005, he was named Entrepreneur of the Year by the magazine América Economía. He has been recognised worldwide for starting a revolution in favour of Peruvian cuisine.

As a result of all these years of hard work, in 2009, the chef received the international prize "Prince Claus of the Netherlands" in the category "Collective Memories and Journalism" for his significant contribution to the interaction of culture, nature and new ideas. Peruvian cuisine has grown exponentially in recent years thanks to his efforts, making Lima the gastronomic capital of South America, home of watershed events such as "Mistura".
