After graduating from the Culinary Institute of America in New York, at the age of 24 he opened his restaurant Pujol in 2000 in Mexico City. Since then, he has been exploring local references beyond the obvious, taking advantage of ancestral and contemporary techniques in consolidating his own discourse focusing on experimentation, dialogue with tradition, product quality and attention to detail. Entrepreneur, he has opened more than 7 restaurants in Mexico as well as Cosme, in New York. Author of the books Uno (2010), Boomerang (2015) and Mexico from the Inside Out (Phaidon, 2015). Promoter of Mesamérica —the main generator of multidisciplinary gastronomic events in Mexico.
